Got friends coming for dinner? This recipe can be your ‘no-fail recipe’ for party food. This recipe will get you firing up the grill on a regular basis. To make a perfect meal, you can combine this with a freshly tossed green salad or warm quinoa.
Here’s what you do:
To make the marinade, combine the olive oil, soy sauce, honey, garlic and salt, and pepper in a large bowl, and whisk to combine.
Add the star of the dish: chicken and veggies to the marinade. Toss the chicken, bell peppers, zucchini, and red onion to coat in the sauce. Cover with cling wrap/saran wrap and refrigerate for at least 1 hour or up to 8 hours.
Prepare kabobs by skewering alternating pieces of chicken and various colorful veggies. Be sure to leave enough room on ends of skewers to flip them while cooking.
Now you can preheat the grill for medium-high heat.
If you are using wooden skewers, soak them in water for at least 30 minutes, so they don’t catch on fire.
Using a non-stick cooking spray, you can mist your grill generously or you can douse a paper towel with vegetable oil and, holding it with tongs, carefully oil grill.
Cook for 5-7 minutes on each side or until chicken is cooked through.
