Equipment

  • Air fryer
  • Silicone muffin cups (compatible with air fryers)
  • Medium mixing bowl
  • Whisk
  • Measuring cups and spoons

Ingredients

  • 6 Eggs large
  • ¼ cup Milk (dairy or plant-based, such as almond milk)
  • ½ tsp Salt (adjust to taste)
  • ¼ tsp Black pepper
  • ¼ cup Shredded cheddar cheese (or your favorite cheese, optional)
  • ½ cup Diced bell peppers (any color)
  • ¼ cup Cooked bacon pieces (or cooked sausage crumbles, optional)
  • 2 tbsp Diced onions (optional)
  • ½ tsp Smoked paprika (for a flavor boost)
  • Cooking spray (for greasing muffin cups)

Instructions

1. Prepare the Air Fryer:

  • Preheat your air fryer to 300°F (150°C) for 3–5 minutes. Lightly spray the silicone muffin cups with cooking spray and arrange them in the air fryer basket.

2. Make the Egg Mixture:

  • In a medium mixing bowl, whisk together the eggs, milk, salt, black pepper, and smoked paprika until well combined. For an extra creamy texture, whisk vigorously or use a hand mixer.

3. Add the Fillings:

  • Distribute the diced bell peppers, onions, cooked bacon pieces, and cheese evenly among the muffin cups. Pour the egg mixture into each cup, filling them about ¾ full.

4. Cook the Egg Bites:

  • Place the basket into the air fryer and cook at 300°F (150°C) for 12–15 minutes. Check for doneness by inserting a toothpick or knife into the center of a bite—it should come out clean.

5. Cool and Serve:

  • Allow the egg bites to cool in the air fryer basket for about 5 minutes before removing them. This will help them set and make removal easier.

Notes

  • Ingredient Substitutions:
    • Replace cheddar with feta or mozzarella for a twist.
    • Swap bacon with diced ham or keep it vegetarian by adding mushrooms or spinach.
  • Storage Tips:
    • Refrigerate leftovers in an airtight container for up to 4 days. Reheat in the air fryer at 300°F for 2–3 minutes.
  • Freezing Instructions:
    • Freeze cooked egg bites individually wrapped in plastic wrap. Thaw overnight in the fridge and reheat before serving.
  • Add Spice:
    • Sprinkle a dash of hot sauce or red chili flakes for extra heat.

Enjoy these air fryer egg bites as a convenient breakfast on-the-go, a quick snack, or a crowd-pleasing brunch addition. They’re versatile, nutritious, and perfect for all occasions!
