Equipment

  • Slow cooker or oven
  • Large skillet
  • Meat thermometer
  • Sharp knife
  • Large mixing bowl
  • Tongs
  • Baking sheet (if using oven)

Ingredients

For the Brisket

  • 3 lbs Beef Brisket (trimmed, with a light fat cap for flavor)
  • 2 tbsp Olive Oil (for searing)
  • 1 tbsp Salt
  • 1 tbsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Onion Powder
  • 1/2 cup Beef Broth
  • 1 cup Barbecue Sauce (plus more for serving)

For the Coleslaw

  • 3 cups Shredded green cabbage
  • 1 cup Shredded purple cabbage
  • 1 medium Carrot (grated)
  • 1/2 cup Mayonnaise
  • 1 tbsp Apple cider vinegar
  • 1 tsp Sugar
  • 1/2 tsp Celery seed (optional)
  • Salt and pepper (to taste)

For the Sandwich

  • 6 Sandwich buns (brioche or potato buns work best)
  • Butter (for toasting buns)

Instructions

Step 1: Prepare the Brisket

  • Season the brisket: In a small bowl, mix salt, pepper, garlic powder, smoked paprika, and onion powder. Rub this mixture generously all over the brisket.
  • Sear the brisket: Heat olive oil in a large skillet over medium-high heat. Sear the brisket for 3-4 minutes on each side until golden brown. This locks in the flavor.

Step 2: Slow-Cook the Brisket

  • Slow cooker method: Place the seared brisket in a slow cooker. Pour in beef broth and barbecue sauce. Cover and cook on low for 8 hours or high for 5-6 hours, until the brisket is fork-tender.
  • Oven method: Preheat your oven to 300°F (150°C). Place the brisket in a baking dish, add broth and barbecue sauce, and cover tightly with foil. Bake for 5-6 hours.

Step 3: Rest and Shred

  • Remove the brisket and let it rest for 15 minutes.
  • Shred the meat using two forks. Toss the shredded brisket with some of the cooking juices for extra flavor.

Step 4: Prepare the Coleslaw

  • In a large mixing bowl, combine green cabbage, purple cabbage, and grated carrot.
  • In a smaller bowl, whisk together mayonnaise, apple cider vinegar, sugar, celery seed (if using), salt, and pepper. Pour over the cabbage mixture and toss to coat. Adjust seasoning to taste.

Step 5: Toast the Buns

  • Heat a skillet over medium heat. Spread butter on the inside of the sandwich buns and toast them cut-side down until golden and slightly crispy.

Step 6: Assemble the Sandwich

  • Place a generous amount of shredded brisket on the bottom bun.
  • Drizzle with additional barbecue sauce.
  • Top with a mound of coleslaw.
  • Add the top bun and serve immediately.

Notes

  • Make ahead: Brisket can be prepared a day in advance and reheated in its juices for easy assembly.
  • Substitutions: Use store-bought coleslaw if short on time, or replace brisket with pulled pork for a variation.
  • Sauce options: Experiment with smoky, spicy, or sweet barbecue sauces to suit your taste preferences.
  • Serving suggestion: Pair with baked beans, pickles, or potato chips for a complete meal.

Tips for Success

  • Searing the brisket enhances flavor but can be skipped if you're short on time.
  • Resting the brisket is key for retaining its juices.
  • Toasting the buns prevents sogginess and adds a satisfying crunch to each bite.
