Equipment

  • Grill pan or outdoor grill
  • Mixing Bowl
  • Knife and cutting board
  • Small spatula or spoon
  • Basting brush

Ingredients

  • 4 slices Sourdough bread (or any thick rustic bread)
  • 2 medium Ripe avocados
  • 2 tbsp Olive oil (extra virgin, for brushing)
  • 1 clove Garlic (halved for rubbing)
  • 1 tsp Lemon juice (freshly squeezed)
  • 1/2 tsp Red chili flakes (optional, for a spicy kick)
  • 1/2 tsp Sea salt (to taste)
  • 1/4 tsp Black pepper (freshly cracked)
  • 1 tbsp Fresh cilantro or parsley (finely chopped, for garnish)
  • 1 small Cherry tomato (diced, optional for topping)

Instructions

  • 1. Prepare the Bread:
Preheat a grill pan or outdoor grill over medium heat. Brush both sides of the sourdough bread slices lightly with olive oil.
  • 2. Grill the Bread:
Place the bread slices on the grill and cook for 2-3 minutes per side until golden and lightly charred. Remove from the grill and rub one side of each slice with the cut side of a halved garlic clove for added flavor.
  • 3. Prepare the Avocado Mixture:
Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash the avocado with a fork, leaving it slightly chunky for texture. Stir in the lemon juice, sea salt, black pepper, and chili flakes (if using).
  • 4. Assemble the Grilled Avocado Bread:
Spread the mashed avocado mixture generously over the grilled side of each bread slice. Sprinkle with fresh cilantro or parsley.
  • 5. Garnish and Serve:
For an added burst of freshness, top with diced cherry tomatoes or a drizzle of olive oil. Serve immediately to enjoy the perfect balance of warm, grilled bread and creamy avocado.

Notes

  • Bread Options: While sourdough is recommended for its robust texture, ciabatta or whole-grain bread works well too.
  • Avocado Ripeness: Use avocados that yield slightly to pressure but aren't overly mushy.
  • Substitutions:
    • Swap lemon juice for lime juice for a zesty twist.
    • Use red pepper flakes or smoked paprika for a different spice profile.
  • Storage Tip: The mashed avocado can brown quickly. If preparing ahead, press plastic wrap directly onto the surface of the avocado mixture to minimize oxidation.
