Equipment

  • Blender or food processor
  • Fine mesh strainer or cheesecloth
  • Saucepan
  • Measuring cups and spoons
  • Pitcher or airtight container

Ingredients

  • 500 grams Strawberries Fresh or frozen, hulled
  • 2 cups Water Divided
  • 1/2 cup Granulated sugar Adjust to taste
  • 1 tbsp Lemon juice Freshly squeezed
  • 1/2 tsp Vanilla extract Optional, for added flavor
  • Pinch Salt Enhances natural sweetness

Instructions

Prepare the Strawberries

  • Wash and hull the strawberries. Cut them into halves for easier blending. If using frozen strawberries, let them thaw slightly for smoother processing.

Blend the Mixture

  • Add the strawberries, 1 cup of water, sugar, lemon juice, and a pinch of salt to a blender. Blend until smooth. Adjust sweetness by tasting at this stage.

Cook the Nectar Base

  • Pour the strawberry puree into a saucepan. Add the remaining 1 cup of water and bring it to a gentle boil over medium heat. Stir occasionally to prevent sticking. Reduce heat and simmer for 10 minutes to concentrate the flavors.

Strain for a Smooth Texture

  • Remove from heat and allow the mixture to cool for 10 minutes. Strain it through a fine mesh strainer or cheesecloth into a clean bowl or pitcher, pressing the pulp to extract maximum liquid. Discard the leftover solids.

Add Final Touches

  • Mix in the vanilla extract, if using. Chill in the refrigerator for at least 20 minutes to let the flavors meld.

Serve

  • Pour the strawberry nectar over ice in tall glasses or store it in an airtight container in the refrigerator for up to 5 days.

Notes

  • Substitutions:
    • Use honey, agave syrup, or coconut sugar instead of granulated sugar for a natural sweetener.
    • Lime juice can replace lemon juice for a zestier kick.
  • Variations:
    • Add mint leaves during blending for a refreshing twist.
    • Use sparkling water instead of still water for a bubbly version.
  • Storage Tip:
Freeze leftover nectar in ice cube trays for convenient single servings or as flavorful additions to smoothies.
  • Pro Tip:
If you prefer a thicker consistency, skip straining or reduce the amount of water during blending.
Enjoy this easy, homemade strawberry nectar as a standalone drink or an ingredient in your favorite recipes!
