Instructions

Prepare the Sausages

  • Cook the breakfast sausages according to the package instructions if raw (pan-fry, bake, or boil). If using pre-cooked sausages, skip this step.
  • Once cooked, allow the sausages to cool slightly before threading them onto bamboo skewers or popsicle sticks. Set aside.

Make the Pancake Batter

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, combine the egg, milk, melted butter, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, whisking until a smooth batter forms. Avoid overmixing to keep the batter light and airy.
  • Transfer the batter to a tall glass or jar for easy dipping of the sausages.

Heat the Oil

  • In a deep fryer or heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy if available.

Coat and Fry the Sausages

  • Dip each sausage skewer into the pancake batter, ensuring it is fully coated. Let any excess batter drip off before frying.
