Ingredients

For the Chicken:

  • 2 Boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1 tsp Italian seasoning
  • ½ tsp Paprika (optional, for added color and flavor)
  • 1 tbsp Olive oil
  • 1 tbsp Unsalted butter

For the Pasta & Sauce:

  • 8 oz Penne pasta (or fettuccine, rigatoni, or your choice of pasta)
  • 3 tbsp unsalted butter
  • 4 cloves Garlic (minced)
  • cups Heavy cream (or half-and-half for a lighter version)
  • ½ cup Chicken broth (for extra flavor)
  • cups Grated Parmesan cheese (freshly grated for best results)
  • ½ tsp Salt (adjust to taste)
  • ¼ tsp Black pepper
  • ½ tsp Red pepper flakes (optional, for heat)
  • ½ cup Milk (to adjust sauce consistency if needed)

For Garnishing:

  • ¼ cup Fresh parsley (chopped)
  • Extra Parmesan cheese (for serving)

Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook according to the package instructions until al dente.
  • Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Prepare the Chicken

  • In a bowl, season the chicken pieces with salt, pepper, Italian seasoning, and paprika.
  • Heat a large skillet over medium-high heat. Add olive oil and butter.
  • Add the seasoned chicken pieces and cook for 4-5 minutes per side, until golden brown and fully cooked.
  • Remove the chicken from the skillet and set it aside on a plate.

Step 3: Make the Garlic Parmesan Sauce

  • In the same skillet, add 3 tbsp butter and melt over medium heat.
  • Add minced garlic and sauté for about 30 seconds to 1 minute until fragrant.
  • Pour in chicken broth and let it simmer for 1-2 minutes to deglaze the pan.
  • Lower the heat and slowly add heavy cream, stirring continuously.
  • Stir in Parmesan cheese, salt, black pepper, and red pepper flakes. Mix well until the sauce is smooth.
  • If the sauce is too thick, add a splash of milk or reserved pasta water to reach your desired consistency.

Step 4: Combine Everything

  • Return the cooked chicken to the skillet and stir to coat with the sauce.
  • Add the cooked pasta and toss everything together until evenly combined.
  • Let the pasta cook in the sauce for another 1-2 minutes, allowing the flavors to meld.

Step 5: Serve & Garnish

  • Remove from heat and garnish with fresh parsley and extra Parmesan cheese.
  • Serve immediately and enjoy!

Pasta Choices: Use fettuccine, rigatoni, or bowtie pasta if you prefer a different shape.
